Baileys Chocolate Poke Cake—the Ultimate Fudgy, Decadent Dump Cake Recipe

This fudgy chocolate poke cake recipe is everything we want dessert to be—totally indulgent, a guaranteed hit with almost any crowd, a little boozy, AND easy to make! Yes, really. Using a bundt pan makes it look so pretty, that it’s hard to believe that this stunning crowd-pleaser of a cake is just actually just a really great, basic chocolate dump cake! Well, maybe basic plus. A splash of good Irish whiskey—we use Jameson, but just about any whiskey you have on-hand will work fine—and a Baileys glaze take this easy dump cake to the next level. You know, just in case you’ve been wondering what do you do with leftover Bailey’s Irish cream—or if you happen to have some homemade Irish cream liqueur around the house—this deliciously moist cake is the answer.

What’s A Dump Cake?

A dump cake is a simple cake where all of the ingredients can be simply—you guessed it— “dumped” into a single bowl and mixed. Dump cake recipes—like this easy one, for example!—almost always begin with a box of cake mix, which means they’re just as easy as can me. Cake mix is one of those brilliant short cut ingredients that we like to keep around. They don’t usually have too many preservatives and, boy oh boy, do they make a wonderful, moist cake come together quick! They’re a great blank slate, too. Grab your cake mix and let’s get creative! Like, Baileys + chocolate + whiskey kind of creative!

Everything You’ll Need To Make This Chocolate Baileys Cake

Sugar and booze, all in one cake! What more do you even need? Maybe a tiny pour of Baileys on the side—just, you know, to wash it all down. Here’s everything you’ll need to make this simple chocolate bundt cake recipe:

  • Yellow cake mix
  • Instant chocolate pudding mix
  • Sugar
  • Eggs
  • Vegetable oil
  • Butter
  • Jameson irish whiskey
  • Powdered sugar
  • Baileys

Does Alcohol Burn Off in Baking?

Yes! The Irish whiskey in the cake will burn off during baking. BUT! While you won’t get drunk—or even tipsy—from this cake, it’s only for the 21-and-over set because the Baileys is added after baking as a syrupy drizzle that soaks (deliciously) into all the little holes that you poke into the cake. That means that the booze in the Baileys Irish cream doesn’t get cooked out. So! Put the kids to bed first, and then serve this yummy cake.

How To Make This Baileys Chocolate Bundt Cake

Dump cake recipes are inherently simple, and poke cakes are inherently moist and AWESOME, therefore this dump / poke cake is both simple and awesome! Here’s how to make it:

  1. Dump everything into the bowl of a stand mixer (or a big mixing bowl) and mix just until everything looks smooth and cohesive.
  2. Grease a bundt pan. No really, like grease it A LOT. Spray is ideal for this job, so really get every nook and cranny of the pan, but you can also just use soft butter if that’s what you have. Just take care to be sure every last inch of the inside of your pan is greased, so that your cake doesn’t stick.
  3. Pour the batter into the pan.
  4. Bake!
  5. Let the cake rest after baking for 15 minutes, then carefully flip the bundt pan upside down and release the cake from the pan.
  6. Poke that cake! Take a fork and poke holes all over the cake.
  7. Drizzle Baileys syrup all over the cake slowly, letting it soak into the holes and drizzle down the sides of the cake.
  8. Serve!

Baileys Chocolate Bundt Cake

Ingredients

  • 1 box yellow cake mix
  • 6 oz. package instant chocolate pudding mix
  • ½ cup sugar
  • 4 eggs
  • 1/2 cup cooking oil
  • 1 stick Simple Truth Organic Butter, melted
  • ¾ cup water, room temp
  • ¼ cup Jameson Irish Whiskey
  • ¼ cup Baileys

Baileys Glaze

  • 1 cup powdered sugar
  • ½ cup Baileys

Method

  1. Preheat oven to 350° F.
  2. Mix cake ingredients together with electric mixer for about 4 minutes, just until the lumps are gone, but taking care not to beat in too much air.
  3. Grease a bundt cake pan with cooking spray or melted butter. Pour cake mixture in.
  4. Bake for 50 to 60 minutes. (Until knife inserted comes out clean)
  5. Combine ingredients for glaze to dissolve sugar. Set aside.
  6. Remove cake from oven and let cool in pan for 15 minutes.
  7. Remove from pan and poke holes in top and sides with fork.
  8. Drizzle glaze over tops and sides.
  9. Let cool for at least another 20 minutes before serving.

    Picked up cook and serve pudding? Can I use it in place of the instant pudding?

    We haven't tried it we would suggest going back for instant pudding.

    How long would you recommend I cook it if I use small individual bundt cakes? It is a heavy dark pan with 6 individual bundts.

    We have only tested this recipe in a large Bundt pan, so it's hard to say! If you'd like to try it with the 6 individual Bundts, you might start checking for doneness early—maybe even after just 20 minutes— by inserting a toothpick into the cakes. If it comes out clean, they're done! If you try the recipe this way, let us know how it turns out!

    I'm making this for Thanksgiving but preparing the cake the night before. When should I poke holes and pour the glaze over it. Can I wait until tomorrow to do this or should I just finish the cake tonight? Please HELP
