We love this easy pork meatball recipe for so many reasons—it comes together quickly, it’s really budget-friendly, it makes plenty (we all love leftovers) and not to mention it is...so. Dang. Good! Lots of seasonings—think fresh ginger, garlic and scallions—and a drizzle of homemade teriyaki sauce make them absolutely irresistible. Two sheet pans, a small skillet and a sharp knife is all you need to take your weeknight dinner to new teriyaki meatball heights.

How To Make Teriyaki Meatballs

A dinner your whole family will love—and (maybe) even love to help make—this teriyaki meatball recipe comes together quickly. Here’s the step-by-step for how to make them:

  1. Mix the meatballs using your hands or a stand mixer. If you use a stand mixer, be careful not to overmix the pork meatball mixture—a light touch is key!
  2. Use a cookie scoop or tablespoon to measure out the seasoned ground pork and roll the meatballs.
  3. Put the meatballs and the broccoli on the baking sheets and place in the oven.
  4. Make the homemade teriyaki sauce by giving soy sauce, honey, garlic, ginger, chili paste and lime juice a quick simmer in a small saucepan.
  5. Once the sauce has cooled and thickened a bit, pour it over the meatballs and roasted broccoli and serve.

Tips For Making Baked Homemade Meatballs

  • Use fatty meat: Using fatty meat will produce a more tender meatball. We chose ground pork for our teriyaki meatballs.
  • Dip your hands in water: use a bowl of water to wet your hands as you roll the meatballs. This is key to creating a smooth and uniform meatball.
  • Use a rimmed pan: you don’t want any meatballs falling off the pan!

Ingredients

  • 2 lbs ground pork
  • 4 eggs
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 cup panko bread crumbs
  • 3 scallions light and dark parts, thinly sliced
  • 2 tsp salt, divided
  • 1 lb broccoli, cut into florets
  • 2 tbsp olive oil
  • cilantro, chopped, optional

Teriyaki Sauce

  • ¾ cup low sodium soy sauce
  • ⅓ cup honey
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp chili paste
  • ¼ cup fresh lime juice

Method

* This recipe makes 35 (golf ball) sized meatballs.

  1. Heat oven to 400° F. In a stand mixer or using your hands, mixture ground pork, eggs, ginger, garlic, panko, scallions and 1 tsp salt until fully incorporated. Using a cookie scoop or heaping tablespoon, measure out roughly 35 meatballs. * Dipping your hand into a bowl of water before rolling them will make the meatball surface smooth. Transfer the meatballs to an oiled, rimmed baking sheet.
  2. Place the broccoli on another rimmed baking sheet, drizzle the olive oil over the broccoli and toss with remaining teaspoon of salt.
  3. Bake in the oven for 20-25 minutes, rotating the broccoli and meatball pans half way through.
  4. Bring the soy sauce, honey, garlic, ginger, chili paste and lime juice to a boil in a small saucepan. Reduce heat to medium-low and simmer, stirring frequently, until slightly thickened and foamy on top, about 10 minutes. Let cool.
  5. Once the sauce has cooled a bit, pour it over the meatballs and roasted broccoli. Sprinkle with chopped cilantro and serve.

** Teriyaki sauce can be made 1 day ahead. Cover and chill. Meatballs can be formed 1 days ahead. Cover with plastic wrap on a rimmed baking sheet and chill.

    I know this was posted so long ago so you might not see this - but would it be possible to replace the 2 lbs of ground pork (which I LOVE) with 1 lb ground pork + 1 lb ground turkey?

    silly questions, but what is the point of the breadcrumbs in this case? and rotate the pan as in switching sides? and what chili paste would you recommend? thank you!

    We add breadcrumbs to soak up the liquid that would otherwise be lost to the sheet pan while the meatballs cook. It yields a moister meatball on a sheet pan IMHO. The meatballs and broccoli bake on 2 baking sheets that go in the oven at the same time. What we mean by rotate, is to switch the pans (top to the bottom and bottom to the top) half way through cooking. Our favorite chili past is Sambal Oelek.
