It’s a Freezer Meal! It’s a Sheet Pan Dinner! It’s BOTH.

In other words, hey internet—say hello to the dinner of your dreams! There’s a reason everyone is so hungry for sheet pan recipes and make ahead freezer recipes—we’re all trying to eat healthier, spend quality time with our families and save a little money if we possibly can. The best way to do all of those things is to simply try to cook at home as often as possible. Easy freezer meals, like this baked Greek chicken, make the goal of cooking at home feel within reach. One of our favorite ways to put a freezer recipe like this to work for us is to prep a double batch of Greek chicken and potatoes on Sunday when we’re doing our meal prep, and bake off half of it for dinner that night and pop the other half into the freezer for the next time we need a fast dinner.

Freezer Greek Chicken—It’s All About the Marinade.

What makes this baked chicken recipe “Greek”? Clearly it’s all about this easy chicken marinade. Just a few pantry ingredients, plus a good squeeze of fresh lemon juice, stirred together to make a Greek chicken marinade that magically calls to mind warm Mediterranean breezes over a glittering, salty Aegean sea. But we digress. What you really need to know is what’s in our chicken marinade! Here’s what you’ll need:

  • Olive oil. Regular olive oil is fine here, no need to use extra virgin.
  • Fresh lemon juice
  • Salt
  • Dried oregano
  • Garlic powder
  • Dried dill

How Long Does Chicken Last in the Freezer?

First of all, THANK YOU for asking. Because the answer is not “indefinitely”. Even frozen foods hit a point of no return, and in the case of frozen chicken breast that point of no return is 9 months. You can always double check freeze times be sure to label your freezer meals carefully to ensure that you’re putting your freezer to work for you safely. We like to label our prepped, frozen meals with:

  • The recipe title.
  • The month / day / year we prepped it and put it in the freezer.
  • How long it can be frozen.

Stock Your Freezer with Greek Lemon Chicken:

This easy chicken freezer meal comes together quick! Grab a freezer bag, and get filling. Here’s how to make it:

  1. Boil the potatoes. Just a quick boil—about six minutes—in salted water and then let them cool completely before you do anything else.
  2. Whisk together the Greek marinade.
  3. Toss the cooled potatoes with half of the marinade. Pour them into the bottom of the freezer bag.
  4. Dredge the chicken breasts through the remaining Greek marinade until they’re nicely coated. Pop them into the same freezer bag as the potatoes.
  5. Squeeze the air out of the bag as you seal it, then flatten it out horizontally so that it can lay flat in your freezer. Label the bag, and pop it in the freezer! Use within 9 months.

Greek Chicken Freezer Meal

Ingredients

  • 1.5 lbs russet potatoes, peeled and cut into 2" pieces
  • 2 lbs chicken breast
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp salt, divided
  • 1 tbsp oregano, dried
  • 1 tbsp garlic powder
  • 1 tbsp dried dill
  • 1 gallon sized freezer bag

Method

  1. Bring a large stock pot filled with water to the boil. Add one tablespoon of salt along with the potatoes, and boil for 6 minutes. Drain potatoes into a colander and allow them to cool completely.
  2. Make the Greek marinade: in a small bowl, combine olive oil, lemon juice, remaining tablespoon of salt, oregano, garlic powder and dill, stir to combine.
  3. In a large bowl, toss the cooled, cooked potatoes with half of the Greek marinade until potatoes are coated. Add potatoes to the bottom of a freezer bag. Use the same bowl to toss the chicken breasts with the remaining dressing. Once they’re well coated, add the seasoned chicken breast to the freezer bag along with the potatoes.

To cook the Greek Chicken Freezer Dinner.

  1. The night before you want to make this Greek chicken freezer dinner, remove it from the freezer and place it in the fridge to thaw.
  2. Heat the oven to 400°F.
  3. When you are ready to bake, spread the defrosted chicken and potatoes out on a lightly greased rimmed baking sheet.
  4. Bake for 20-25 minutes until the internal temperature of your chicken reaches 165°F on an instant read thermometer.
  5. If you want to add some color to the chicken and potatoes, broil for another 3-5 minutes.

    Do you know if once frozen, you could cook this with a sous vide?
