When life gets just a little too busy for a full-on dinner party, we love the ease of inviting friends over for drinks. However loaded our days are, we can always manage to grab a wine opener, and nothing recharges our batteries like sharing some time with a friend or two. We do have a rule though—no drinks without at least something to nibble on. In times of true desperation, we’ve been known to open a bag of chips and call it good. But, if we can scrape together 30 minutes, we can make this tender, herby flatbread AND this creamy, luscious whipped feta to spread on it. This appetizer is so easy and quick, you could even throw it together while your friends open the wine / mix the cocktails / mocktails / set up the board game.

Starters Start Here: The Easiest, Herbiest Flatbread Ever.

If you’re intimidated by bread, just take a deep breath and hold our (virtual) hands—we’ve got your back and we swear to you, this is a foolproof flatbread recipe. It’s fast, and so, so simple. You can do it! Here’s what you’ll need to make it:

  • All-purpose flour
  • Dry active yeast
  • Salt
  • Warm water. This is our one moment of bread-related fussiness, promise. Make sure that water is right around 110°F. Just humor us and pull out a thermometer, OK? It’ll help to make sure that your yeast is happy, which is the key to making sure your bread turns out.
  • Olive oil.
  • Fresh herbs! Chives, rosemary, thyme—coincidentally, the same herbs you'll need for the whipped feta. Isn't it nice how that works?

And The Creamiest, Spreadiest Spread: Creamy Whipped Feta

If you haven’t picked up on the theme of this gloriously carby appetizer yet, it’s definitely HERBY-NESS. Fresh, verdant, fragrant herbs make basic food like this—essentially just a dressed up take on bread and cheese—taste positively restaurant-worthy. They’re such a simple trick, if you can call using fresh, classic herbs a “trick”. Without the brightness of the chives, rosemary and thyme, the whipped feta would be fine—creamy, cheesy, a bit salty. But with them, it’s transformed into a pillowy, spreadable cloud of complexity and deliciousness. To make it, all you’ll do is whip these four ingredients in a blender or food processor until they’re just combined:

  • Feta
  • Cream cheese
  • Black pepper
  • Fresh herbs: thyme, rosemary, chives.

Herbed Flatbread with Whipped Feta

Ingredients

Herbed Flat Bread

  • 2 1/2 cups all-purpose flour
  • 2 tsp dry active yeast
  • 1 tsp salt
  • 1 cup water, warmed to 110°F
  • 4 tsp olive oil (plus more for frying)
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped

Whipped Herb Feta

  • 8 oz feta
  • 4 oz cream cheese
  • 1/2 tsp black pepper
  • 1 tbsp fresh chives, roughly
  • 1 tbsp fresh rosemary, roughly
  • 1 tbsp fresh thyme

Method

  1. Place flour, yeast, and salt into a mixing bowl and add water and oil. Mix for 1 minute. Move dough (it will be sticky) on a floured surface. Flour the top of the dough and cover with a towel. Let rest for 10 minutes.
  2. After 10 minutes, preheat a cast iron skillet to med-high with a light coating of olive oil.
  3. Divide dough into eight piece and press each piece until ⅛ inch thick.
  4. Cook the dough pieces in the hot pan for about 1 minute per side, remove and sprinkle with fresh herbs. The pan may need to be re-oiled with each dough piece.
  5. In a food processor add all of the ingredients for the whipped feta. Blend on high until smooth. About 4 minutes. Can be stored for up to a week.

    After resting and flattening out the dough, how long can I leave the uncooked flat bread before cooking?

    I wouldn't wait too long, under an hour. the dough will continue to rise if you wait too long.

    could the flat bread be made with gluten free flour? I have some cup for cup. Would I need to add more xanthan gum?

    We haven't tested this yet with gluten free flour. We'd love to hear if you give it a try.

    I’m going to make the flat bread for Mother’s Day dinner tonight, I’ve already made the amazing herb feta…can I grill on the barbecue instead of in a skillet as I’m also grilling zucchini and then steaks?

    I don't own a cast iron skillet. (Arthritic hands) Is this doable in a different skillet? Will non-stick work, or stainless? Thanks!

    Since y'all are in Washington - do you remember the (sadly closed down) restaurant Cucina! Cucina! ? I am having a dinner party and want to mimic their chop salad and flatbread with roasted garlic? Do you think this would be a good recipe to use for that? Also, can you make the dough ahead of time and freeze it?

    I've never been to Cucina! Cucina! but I am sure this would work great for making flatbread with roasted garlic. Yes, you can freeze the dough!
