The Easiest Way to Roast Beets

With their beautiful, intense, deep, red color and sweet, earthy flavor, beets really are the star of the show in just about any dish! In addition to their vibrant hue of deep purple, we love roasted beets for their soft, luscious texture and nutritional benefits. This easy-enough-to-make-on-a-weeknight, how to roast beets recipe will have you adding them to so many meals! The only thing you’ll need is a sharp knife, some foil, a bushel of beets and a hot oven. It’s super simple (you don’t even have to peel them beforehand!) and crazy delicious. Take it up a notch by seasoning them with garlic, oregano, or cumin.

How to Prepare Beets For Roasting

Beets can be found year-round in your grocery store but are best when in season, starting around November and throughout the winter! When choosing your beets, ensure they are firm to the touch, avoiding the soft ones. Don’t worry too much about the dirt, just be sure to clean them before cooking. If possible, choose beets with their greens still intact! Not only do the greens keep beets fresher for longer, but can actually be sauteed and enjoyed as a healthy side! To prepare your beets for roasting in the oven, trim off the tops and any additional roots that may be present. Run them under cold water, carefully scrubbing with your hands to remove any dirt. You might even be wondering…do you have to peel beets before roasting? You don’t! The skin will easily slip off after they come out of the oven!

What To Serve With Roasted Beets?

Beet’s us! Just kidding – we love to pair beets with creamy cheeses, vibrant citrus dressing, and other root vegetables and herbs! Packed with vitamins, minerals, and antioxidants and known for their fiber, roasted beets add an earthy, vibrant flavor to any meal! In the fridge, they will last up to two weeks, but feel free to freeze them to extend their lifespan!

How to Oven Roast Beets in Foil

  1. Prep your beets! Sometimes, we like to wear gloves during this step. Although we admire beets for their bright reds and purples, they have a tendency to temporarily stain your hands. Reminder, you don’t need to peel your beets now! The skins will slide right off once they’re roasted. Coat them in olive oil and sprinkle them with salt and pepper.

  2. Wrap your beets! Individually wrapping the beets in foil allows for them to become soft, sweet, and juicy on the inside!

  3. Roast your beets! Crank that oven up to 400°F and kick back for the next 40-50 minutes until they come out! If you’re using the beets in a recipe, now is a great time to prep!

How to Roast Beets

  • Serves: 4
  • Prep Time:  5 min

Ingredients

  • 4 large (3” wide) beets, 2 pounds total
  • extra virgin olive oil, optional
  • sea salt, optional
  • freshly cracked black pepper, optional

Method

  1. Preheat the oven to 400°F.

  2. Trim the green tops and the long roots off of the beets. Rinse the beets under water, washing any dirt off of them.

  3. Place each beet on a square of tin-foil large enough to wrap completely around them. Wrap the foil around the beet loosely, but make sure the opening of the foil is sealed. Place the foiled wrapped beets on a baking sheet and roast until tender, about 45-50 minutes.

  4. Once the beets are done roasting, remove them from the oven. Let them rest until they are cool enough to handle. Gently rub the skins off. This can easily be done with a paper towel or your hands.

  5. Add roasted beets to salads or enjoy on their own, heated with a drizzle of olive oil or melted butter and a little salt and pepper.

  6. Beets will keep for up to two weeks if placed in an airtight container and left in the refrigerator.
