What Are Irish Nachos?

Irish nachos aren’t actually considered an Irish dish and there is actually no specific way of preparing them or traditional toppings. So why are they called Irish nachos? They are referred to as Irish nachos because they call for Ireand’s treasured potatoes instead of classic, tortilla chips. The thin cut potato rounds are slightly crispy on the outside and tender on the inside, creating the perfect bite. We sprinkle our potato rounds with a flavorful mix of garlic powder, onion powder, chili powder, and sea salt. Expect the perfect mozzarella cheese pull when you lift a potato round off your plate! Crispy bacon adds extra flavor to that perfect Irish nacho bite! Top with sour cream, pico de gallo, green onions, and if you like a little heat–sprinkle some jalapeños on top!

A big reason we love this recipe for irish nachos is the simplicity! Here are the few things you’ll need to grab for the potato portion of this dish!

  • Russet potatoes - your nacho ‘chips’ for this dish.

  • Cooking spray

  • Extra virgin olive oil

  • Garlic powder

  • Onion powder

  • Chili powder

  • Sea salt

How to Make Irish Nachos

These Irish potato nachos are insanely simple to make, and are truly a game changer! If you or the crowd you’re making this dish for loves a good plate o’ nachos, this recipe is for you! The true challenge is not eating all the nachos before your guests arrive! Here’s how to make our Irish pub nachos:

  1. Scatter sliced potatoes on a baking tray, pat them dry with a paper towel, and drizzle with olive oil.

  2. Sprinkle garlic powder, onion powder, chili powder and salt over the potato rounds. Toss the rounds to evenly coat that yummy spice mixture!

  3. Next, add cheese and bacon! Place back in the oven til’ melted cheese nirvana has been achieved!

  4. Add the real show stopper - the toppings!

It’s Toppings Time!

Okay, so what are Irish nachos made of? This simple baked Irish nachos recipe is all about the toppings. Here are some of our favorite toppings:

  • Mozzarella cheese has a delightful mild flavor, but shredded cheddar or pepper jack also works.

  • Bacon. We love what bacon adds to the dish. If you want to keep this meat-free, skip the bacon and load up on other toppings!

  • Sour Cream. Don’t be afraid to add a few dollops so that everyone gets a little sour cream!

  • Pico De Gallo or Salsa guarantees a little acidity in each bite. We also recommend trying our Salsa Verde.

  • Green Onions or chopped cilantro add a fresh flourish.

  • Pickled or raw jalapeños to kick up the heat on these Irish nachos.

  • Other topping ideas: Red onions, diced tomatoes, black olives, shredded cabbage, our perfect guacamole, etc!

Irish Nachos

Ingredients

  • Cooking spray
  • 2 ½ pounds russet potatoes, scrubbed clean and sliced into ¼-inch thick rounds
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • 1 teaspoon sea salt
  • 3 cups shredded mozzarella cheese
  • 8 ounces cooked bacon, cut into 1-inch pieces

For Serving

  • 2 cups sour cream
  • ½ cup pico de gallo or salsa
  • 3 green onions, chopped
  • Jalapeño, sliced

Method

  1. Preheat the oven to 450°F and grease a rimmed sheet pan with cooking spray

  2. In a medium bowl, toss the potatoes with the olive oil, garlic powder, onion powder, chili powder, and salt. Arrange the potatoes on the prepared sheet pan, being careful not to overcrowd. Roast until the browned and tender, about 20 minutes.

  3. Remove the sheet from the oven and sprinkle the potatoes with the cheese and cooked bacon. Return to oven until the cheese is completely melted, 3-5 minutes more.

  4. Transfer potatoes to a platter and top with sour cream, salsa, green onions, and jalapeños to serve.
