This vinaigrette adds a little citrus twist and herbed goodness to anything it touches. We use it anywhere we need to lighten things up with some lemon love.

A Lemon Salad Dressing For Every Day

The lemon herb vinaigrette hits all the right notes of what we want from a vinaigrette. A little sharpness from the mustard, a bright note from the fresh squeezed lemon, a touch of sweetness from sugar, a dash of salt, and everything held together with chopped chives in an emulsion with olive oil. It’s as fresh as they come! We hope you love this simple homemade lemon vinaigrette for your everyday salad dressing needs.

Ingredients For Lemon Vinaigrette Salad Dressing

  • Fresh lemon juice, from 2-3 lemons

  • Brown or dijon mustard

  • Sugar

  • Salt

  • A little extra virgin olive oil

  • Finely chopped chives

How To Make The Best Lemon Vinaigrette

In a bowl mix the lemon juice, mustard, sugar and salt. Slowly pour in the olive oil, whisking constantly to emulsify. Last but not to be forgotten–stir in the chopped chives! This dressing is easily adaptable (we’re often missing something after we’ve started making a recipe!). No sugar? Whisk in some maple syrup! Are your chives a little more wilted than you remembered? Throw in some chopped shallots or other fresh herbs (thyme would be great)! Can I make lemon vinaigrette ahead of time? Absolutely! You can keep this stored in a jar with a tight-fitting lid in the fridge for up to two weeks. Just give it a little shake each time you need to use it.

Ingredients

  • 5 tablespoons fresh lemon juice (from 2-3 lemons)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon granulated sugar
  • ½ teaspoon sea salt
  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons finely chopped fresh chives

Method

  1. In a small bowl whisk together the lemon juice, mustard, sugar, and salt. Slowly pour in the olive oil, whisking constantly, until emulsified. Stir in chives.

  2. Store refrigerated in an airtight container for up to 2 weeks.
