Marry Me Chicken

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1½ teaspoons kosher salt
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken stock
  • 1 teaspoon chicken flavor “Better Than Bouillon” (or 1 chicken bouillon cube)
  • ½ cup grated Parmesan cheese
  • 1 (7-ounce) jar sun-dried tomatoes, drained and roughly chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup thinly sliced basil leaves
  • Cooked pasta or mashed potatoes, for serving (optional)

Method

  1. Pat the chicken dry. Season all over with 1 teaspoon salt.

  2. Heat the oil in a large skillet over medium-high. Once the oil is glistening, add the chicken and cook about 5 minutes per side, or until golden brown. Transfer the chicken to a plate.

  3. Add the garlic to the same skillet and cook until fragrant, about 30 seconds. Stir in heavy cream, chicken stock, bouillon, ¼ cup of the parmesan cheese, sun dried tomatoes, Italian seasoning, pepper, ¼ teaspoon red pepper flakes, and remaining salt until fully combined.

  4. Return the chicken to the skillet. Bring the sauce to a simmer, then reduce the heat to medium low. Cook until the internal temperature of the chicken reaches 165°F on an instant-read thermometer, about 5 minutes more.

  5. Top chicken with basil, remaining Parmesan cheese, and remaining red pepper flakes and serve over pasta or mashed potatoes, if desired.

    Can you freeze this dish?

    We haven't tried but we think it should freeze ok.

    I plan to make this the day before my dinner party. I will be tripling the recipe.

    Is it best to reheat it in the oven?

    If so, at what temperature and for how long? (Remember ... I'm tripling the recipe.)

    We haven't reheated this much at one but we'd recommend doing it low and slow. Try reheating on 250 F. It might take 20-30 minutes.

    Can I use dark meat chicken? Like boneless thighs?

    Yes, but it will take longer to cook than the stated times in the recipe since thighs cook longer than breasts so just make sure the thighs have an internal temperature of 175 degrees Fahrenheit before you finish cooking. Hope you enjoy Sara!

    What if you don’t have enough heavy cream what do you substitute with

    There's not a great substitute for heavy cream but if you absolutely need to you could use whole milk or canned coconut milk.

    This was Super good! Changed a little bit of the recipe. I topped with fresh spinach sliced and let it cook down because my husband doesn't like basil. I cut the chicken breast in half because I don't like thick chicken. We didn't have Italian seasoning so I added in garlic powder, oregano, parsley, and sneaked in a little dried basil. The store I went to didn't have a jar of sun dried tomatoes so I used a pouch I found (way better because the jars have too much oil for my liking). I doubled the heavy cream and chicken broth because hello it's sauce. And I used a Maggie brand chicken bouillon.

    Delicious but the chicken took much longer to cook than what the recipe indicates and ended up being tough and dry. I would suggest pounding the chicken breasts so they are thinner and uniform in thickness so they truly cook in the allotted time.
