The Best Roasted Beets Recipe Is Finally Here!

Simply said, roasting beets in the oven brings out their earthy flavor and tender texture. But what makes this roasted beets recipe really stand out is how easy it is to roast beets! They’re finished with a light, bright herby dressing which really brings out their deep, natural umami flavor and sweetness. In less than one hour, you have an easy, vibrant side dish to perk up any meal: the perfect addition to a quick everyday dinner but notable enough for special occasions. Although these are best when seasonal, we could devour them any time of the year! This purple-y red root veggie might even convert non-veggie lovers (and kids!) to love beets! Oh, and did we mention that oven roasted beets are inherently healthy? Another reason we love them!

How Long Should I Roast Beets For?

The mother of all questions when it comes to how to roast beets! And truly, it depends on the method. So, what is the best way to cook beets? We have three favorite easy ways to roast beets: the first being in this recipe for roasted beets at 400° F for 35-45 minutes – a true pop them in the oven and forget it recipe! The second method is our roasted beets in foil, which creates a slightly crispy exterior while leaving the inside soft. And, finally, the third method, which is boiling like in this Moroccan Beet Salad. And if you’re wondering, “Do you have to peel beets before roasting?” well, this also depends on the technique. For oven roasted beets, you’ll peel them directly before you roast them, to remove any tough parts and extra-earthy undertones. For our foil-roasted beets, you can skip peeling altogether as the skins will slide right off after they’re baked!

What To Do With Roasted Beets?

These slightly sweet, tangy, tender morsels are delicious enough on their own! In this roast beet recipe, we like to dress them up with white vinegar, fresh chopped herbs, cracked pepper, and a little pad of butter. To make it your own, we suggest crumbling fresh goat cheese or feta over top. Or try switching out white wine vinegar for champagne vinegar. We also love to add them to hearty salads for a little bulk and nutrition, such as Roasted Beet Salad with Chèvre Green Goddess Dressing or in a Salmon Bowl. Never miss the opportunity to dip them into a Classic Creamy Hummus or a Homemade Basil Pesto as they’re the perfect vessel for most sauces.

How to Roast Beets

  1. Prep the beets for oven roasting! Fresh beets are best: whether you get them from your local farmer's market or grocery store, if your beets still have little roots hanging off the bottom, and the tops left on, you’ll want to chop them off. Give them a quick rinse then using a paring knife or veggie peeler, remove all the skin!

  2. Season! A little extra virgin olive oil and salt goes a long way! Many roasted beet recipes call for a variety of spices but we like to keep it simple! And if you’d like to spice it up, be our guest!

  3. Bake! Because we’re looking for a slightly caramelized, tender texture, and not so much crispy, we slow roast the beets in oven for 35-40 minutes.

  4. Dress and Enjoy! Vinegar and a sprinkling of fresh herbs seal the deal on this perfect recipe for roast beets!

Roasted Beets

Ingredients

  • 4 large (3”- inch wide) beets, 2 pounds total
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh herbs such as thyme, basil, mint, tarragon or chives
  • Freshly ground pepper to taste

Method

  1. Preheat the oven to 400° F.

  2. Trim the green tops and the long roots off of the beets. Rinse the beets under water, washing any dirt off of them. Using a vegetable peeler or a paring knife, peel the beets. Cut the beets into 1-inch wedges or 1-inch pieces.

  3. In a large bowl, toss the beets together with the oil and salt. Spread the beets out onto a large rimmed baking sheet and roast them in the oven until tender, about 35- 40 minutes.

  4. Drizzle the roasted beets with the vinegar, herbs and pepper, tossing to combine.

  5. Serve warm or at room temperature.
