Let’s talk about tacos! Specifically, let’s talk about these roasted cauliflower tacos with tangy avocado crema. It is Tuesday after all, which gives us all just the excuse we need to eat more of our easy weeknight dinner staple: tacos!

Even the Kids Will Eat These Easy Cauliflower Tacos.

We eat a LOT of tacos in our house. A lot. In fact, the other day I was making steak and broccoli and my oldest kid started making guacamole and warming up tortillas. When I asked why he was making such an elaborate snack WHILE I was making a full dinner, he replied “Mom, we can just turn what you’re making into a taco recipe. It’ll be so much better.” That’s my kind of kid!

And hey, he was right. Everything's better when served in a warm tortilla and paired with avocado, which is why I’m currently obsessed with this smokey, taco seasoning adorned cauliflower taco recipe.

Give Me All the Cauliflower

I’ve always loved cauliflower, but lately my obsession has reached new heights. Maybe you’ve noticed, but we’ve had a lot of cauliflower going on around here lately. Here's a few that I'm currently crushing on!

It seemed only natural to marry my two great food loves off to one another for this dynamite vegetarian taco recipe. And cauliflower with taco seasoning + tortillas are a match made it heaven, if I do say so myself.

Perfectly Crispy Cauliflower Tacos.

We discuss the best method for roasting cauliflower at length in our Roasted Cauliflower post, but just in case you missed it, here’s a refresher. The key to achieving the ideal texture and color with your roasted cauliflower is using high heat. We like the inside of our cauliflower to be soft and the outside to be crispy. Roasting it at too low a temperature will result in a mushy texture, which is not at all what we’re going for here.

How to Make Cauliflower Tacos

Besides the obvious of roasted cauliflower (seasoned with our favorite Homemade Taco Seasoning), here are a few things we love to add to these vegetarian tacos:

  • Avocado or guacamole
  • Shredded cabbage
  • Fresh squeezed limes
  • Zesty avocado crema

How to Make Avocado Crema

The cauliflower makes these tacos delicious, but the avocado crema makes them craveable. To create this luscious concoction we use avocados, sour cream, lots of garlic, a decent amount of lime juice, and a handful of fresh cilantro. All that goodness gets blended until creamy and the result is a sauce you’ll wish you made more of. You can drizzle the crema on top of your taco (like we did here), or toss the cabbage in it for an ideal slaw.

Roasted Cauliflower Tacos

Ingredients

Cauliflower Taco

  • 1 large head of cauliflower, cut into small florets
  • 2 tbsp taco seasoning
  • 2 tbsp olive oil
  • 2 tbsp lime juice (1 lime)
  • tortillas
  • cilantro
  • shredded cabbage

Avocado Crema

  • 1 avocado
  • 1 garlic clove, minced
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/4 cup lime juice
  • 1/4 cup cilantro

Method

  1. Preheat oven to 400°F.
  2. In a large bowl toss cauliflower with taco seasoning, olive oil and lime juice then spread out on a large baking sheet.
  3. Place on center rack and bake for 30 minutes or until cauliflower is tender with crispy edges.
  4. While cauliflower is roasting prepare avocado crema by placing all ingredients in a food processor or small blender and blending until smooth.
  5. Warm tortillas and add roasted cauliflower along with shredded cabbage and fresh cilantro. Top with avocado crema and serve.

    So good! I wasn't so sure if my husband would like cauliflower tacos because he is a meat fan but, he absolutely loved them! The avocado crema was the best, I would definitely use it for a dipping sauce for other things too!

    I have tried 2 recipes b4 yours and we weren’t happy with the results. We found yours and I plan to make your recipe my go to forever more. The tacos really great! I made also made the crema and followed the link for the taco seasoning. I halved the creams ingredients and quartered the taco recipe seasoning recipe to not commit without trying, lol. I will def be making again!
