When I Dip You Dip We Dip!

There is nothing wrong with a plain cheese quesadilla—we love them, we grew up on them! Slap some cheddar cheese in a flour tortilla and pop it in the microwave for 30 seconds—oh yeah, we did that pretty much every day after school from age 7 to 17. But we’re a little older and our tastes have matured. Wait, scratch that. We’re a little older and we know how much better a cheese quesadilla can be. This sheet pan quesadilla recipe features a whole mess of upgrades, like:

Instead of just one cheese, use TWO. We use mozzarella—nothing melts better than mozzarella—and pepper Jack cheese.

Instead of a bunch of individual quesadillas, make one huge one! (we promise this is easier than it sounds.)

Instead of microwaving the cheese (it just never gets melty in quite the right way when you try to microwave a quesadilla) you’ve got to bake the quesadilla.

Instead of serving the quesadilla on its own, whip up a fast, easy homemade jalapeño ranch dressing for dipping!

Excuse Me, Did You Say Jalapeño Ranch Dip?

Yes, yes we did. We all know the biggest hit at any party—at least any party we’ve ever thrown—is always the dish that involves ranch dip or melty cheese. So, we thought to ourselves, what if we could dream up a party recipe that brought those two things deliciously together? Enter this sheet pan quesadilla recipe! The homemade jalapeño ranch dip is easier than it sounds. All you’ll need to make it is:

  • Mayonnaise
  • Sour cream
  • Onion powder
  • Garlic powder
  • Cilantro
  • Pickled jalapeños
  • A few limes

How To Make Quesadillas for a Crowd

Bringing out a single, huge, perfectly warm, melty cheese quesadilla to a bunch of hungry friends is a really great feeling. It’s a little showy, and just generally awesome. It’s a giant quesadilla! With ranch dressing for dipping! It’s all of your childhood food dreams come true. Here’s how to make a giant cheese quesadilla:

  1. Cover a greased baking sheet with tortillas. Six around the edges, two in the middle, until the whole sheet is covered.
  2. Fill the giant tortilla! Mozzarella and pepper Jack cheese, freshly grated, along with creamy avocado and green onions. Top with more tortillas.
  3. Brush the top with oil (or use a spray) because you’ll be topping the giant tortilla with another baking sheet to help it hold together as it bakes and you don’t want the second baking sheet to stick.
  4. Bake! This giant quesadilla takes about 25 minutes to bake.
  5. Make the jalapeño ranch while the quesadilla bakes by just whizzing all of the ranch ingredients together with an immersion blender (or in a food processor.)
  6. Serve! We like to cut the quesadilla into squares, for easy pick-up-and-dip action.

Sheet Pan Quesadilla with Jalapeño Ranch

Ingredients

  • 10 8-10” flour tortillas
  • 1 cup mozzarella, grated
  • 1 cup pepper Jack cheese, grated
  • 2 large avocados, thinly sliced
  • ½ cup green onions, minced

Jalapeño Ranch

  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ cup cilantro, finely minced
  • 1/2 cup pickled jalapeños, drained
  • 2 tbsp lime juice

Method

  1. Preheat the oven to 425°F.
  2. On a large greased baking sheet arrange six tortillas around the perimeter so that half of each tortilla is hanging over the edge. Fill the middle of the baking sheet with two more tortillas (See step by step photos).
  3. Top with grated cheese followed by sliced avocados and green onions.
  4. Fold the overhanging tortilla into the center to cover the filling and finish off with two more tortillas over the center. Generously brush or spray tortillas with oil and place a second (oiled underneath) baking sheet on top of tortillas to keep tortillas flat while baking. Bake for 20 minutes covered, followed by 5 minutes uncovered or until golden and crispy.
  5. While quesadilla is cooking make the jalapeño ranch by blending all ingredients together using either an immersion blender, blender or food processor.
  6. Cut quesadilla into large squares and serve dipped into jalapeño ranch.

    How big is one serving size? It says 442 calories per serving. But it doesn't say how big one serving is?

    We looked into this one and it looks like the ranch got left out of the nutrition. If you serve it with the ranch this recipe serves 6 people and the calories would be 762. Thanks for bringing this to our attention, we will be updating the nutritional information card.

    How much of each ingredient for the dip?

    To make the jalapeño ranch you add ALL of the ingredients listed under the title "jalapeño ranch" to the base of a food processor and blend until smooth.

    This was amazing! I'm going to make it again soon however the part of the tortillas that were touching the baking sheet while in the over were burnt to the dickens when everything was done cooking. Do you have any tips that might help prevent this in the future?
