sweet corn, drained

black beans, drained and rinsed

chickpeas, drained, and rinsed

finely chopped cilantro

minced green onions, white and green parts

poblano pepper, seeded and minced

lime juice

olive oil

ground cumin

- salt and pepper to taste
Method
- In a medium sized bowl combine all ingredients and mix well. Refrigerate for 1 hour (or longer) before serving. Serve alongside corn chips.
