We love breakfast and we know we're not alone, but this sweet potato and carnitas hash? It’s a borderline obsession.

We created this sweet potato and carnitas breakfast hash years ago. We'd made a big batch of Slow-Cooker Crispy Carnitas and were racking our brains as to how to put it to good use.

We love leftovers, but leftovers you can use in a new and even more delicious way? Right up our alley. This carnitas hash recipe is so simple to make. So yeah, let's just say that this carnitas breakfast hash is our new BFF.

What is a Breakfast Hash?

This carnitas and sweet potato hash recipe feels fancy and “extra,” but is so easy to make and an ideal way to use up leftovers. Sounds too good to be true, right?

How to create one amazing breakfast hash:

  • It's ALL about the potato. While any potato will do, for this carnitas hash recipe we chose the mighty sweet potato. We like its bold and sweet flavor juxtaposed against the rich and salty pork carnitas.
  • Get your meat on. Bacon, sausage, leftover chicken or steak...it all works. However, shredded, aggressively-flavored meats are especially good. For this reason corned beef is very popular in hash. We went with leftover pork carnitas for this recipe. So, so good!
  • Throw some veggies in! Really this is a place where you can do no wrong. Whatever you’ve got, just throw it in! This sweet potato and carnitas hash recipe is rocking red and green bell peppers and onion.
  • Put an egg on it (or in it). You can scramble eggs into the hash, serve it with poached eggs, or top this breakfast hash with a beautifully fried egg (or two, or three) like we’ve done here.
  • Top that hash! For this Mexican-inspired brunch dish we went with avocado and cilantro. Other welcome additions could be sour cream, hot sauce, a fresh salsa...you get the idea.

Oh yes, yes we are. Carnitas are hard to get tired of, which is a good thing because we tend to make HUGE batches of it and use it on everything. The leftovers are perfect for this breakfast hash, in hearty omelettes, or even topping a good piece of avocado toast. Even better? This carnitas recipe is Whole30 approved!

What is Pork Carnitas?

  • Pork butt slowly braised in an incredibly fragrant broth.
  • When the pork is finished the broth is then reduced to make a thick glaze.
  • The pork is shredded, and then glazed with the liquid and broiled.

Sweet Potato Carnitas Hash

Ingredients

  • 2 tbsp olive oil
  • 2 medium sweet potatoes, peeled and cut into 1" cubes
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 small yellow onion, thinly sliced
  • 1/2 tsp kosher salt
  • 1-2 cups carnitas
  • 2 eggs, fried
  • 1 avocado, thinly sliced (optional)
  • fresh cilantro for serving (optional)

Method

  1. Heat the olive oil in a 10-inch skillet set over medium-high heat. Fry the sweet potatoes for about 5 minutes, turning occasionally when starting to brown. If they sweet potatoes brown too quickly, reduce the heat slightly. Add peppers and onions and continue to cook until all the vegetables are tender, about 10 minutes. Add the carnitas and cook until warmed through. Season with salt.
  2. Top with fried eggs, avocado and cilantro.
