Simple twice baked potatoes can be as easy as folding a little sour cream and cheddar cheese into mashed potatoes and loading that dairy-laden mixture back into your scooped out baked potato skins. However, we’re card-carrying subscribers to the “more is more” school of thought, so we’ve turned hum-drum twice-baked potatoes into the BEST twice baked potatoes ever thanks to the addition of sharply savory blue cheese and plenty of crisp, crumbled bacon.

What Is a Twice Baked Potato?

You’re never going to believe this, but a twice baked potato is a potato that is, in fact, baked twice! The first bake is simply to cook the potato—an hour at 400°F and you’ve got yourself a regular old, baked potato.

The second bake, however, is when things get interesting. After that initial bake, the russet potatoes should be fork-tender—soft enough that you can simply scoop out the insides. Then those starchy potato insides are gently mixed with the cheesy, creamy, delicious things of your choice and the resulting creamy mashed potatoes are spooned back into their scooped-out skins and baked once more.

How Do You Heat Up Twice Baked Potatoes?

Twice baked potatoes are a superstar main dish or side dish for many reasons, not the least of which is the fact that they’re easy to make ahead. The potatoes can be baked and filled one day ahead of when you plan to serve them. Just cover them with plastic wrap and refrigerate until you’re ready to use them. Bring them to room temperature and heat the oven to 400°F before doing the second bake.

Twice Baked Potatoes

Ingredients

  • 4 large russet potatoes
  • 1 lb bacon, cooked and roughly chopped
  • 2 cups medium cheddar cheese, grated
  • 4 oz blue cheese, crumbled
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 4 green onions
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method

  1. Preheat oven to 400°F.
  2. Bake potatoes for 1 hour 15 min on a parchment or foil lined baking sheet until fork tender, about 1 hour.
  3. Lower oven temp to 350 °F.
  4. Allow potatoes to cool and cut in half. Using a cookie scooper or a spoon scoop out the inside of the potatoes, leaving a thin layer of potato still attached to the skin. Place removed potato in a large mixing bowl.
  5. To the potato flesh in the bowl add ¾ of the bacon, 1 cup cheddar, ½ of the blue cheese, the sour cream, heavy cream, ¾ of the green onions, salt, pepper, onion and garlic powder. Mix until fully combined.
  6. Divide the potato mixture between the skins. Sprinkle with remaining cheese. Bake in the oven 20 minutes. Top with remaining blue cheese crumbles, remaining bacon and remain green onions.
